Delicious Layered Hummus Recipe
What should you prepare when you have lots of chickpeas? Lots of Hummus!
This simple recipe is a twist on the traditional Hummus dish, and is made of two layers of Humus, and a top layer of chickpea casserole.
Serve with some bread on the side and you can enjoy this delicious Hummus recipe as a meal!
Delicious Layered Hummus
Serves 3-4 people with bread
Humus ingredients:

2 cups of pre-cooked chickpeas
3 garlic cloves
1 tbsp of cumin
Juice from 1 lemon
1/4 cup tahini
Salt to taste
1 cooked beetroot
Water (if needed)
Casserole ingredients:
2 tbsp oil
2 chopped garlic cloves
350g tomato sauce of choice
1 red pepper, chopped
2 cups vegan mince
1 cup pre-cooked chickpeas
Water as needed
Oregano leaves
Method:
Blend all of the Hummus ingredients except the beetroot and water in a food processor until smooth and creamy. Add water if needed. Use half of the Hummus for the first layer. Then add the beetroot to the remaining half and blend to create the second pink layer.
For the top layer, lightly fry the garlic in a deep frying pan, then add the red pepper and stir for 2 min. Mix in all of the other casserole ingredients except the oregano leaves and add water to almost cover the casserole. Stir, and bring to boil. Then lower the heat and simmer for 15 min, stirring occasionally. Add more water if needed. Spread the casserole over the beetroot layer and garnish with oregano leaves.
