Chocolate. Strawberries. Pancakes. Sounds like the perfect Valentine’s Day combination right? But it gets better!
This is one of the simplest recipes you will follow – a two steps recipe that will help ensure you spend less time cooking and more time loving (and eating)…
Vegan V-Day Chocolate Chips Pancakes
Makes 6 pancakes
For the pancakes:
1 cup of plain flour
1 cup of vanilla flavoured soya milk
1 tsp of vanilla essence
1 tbsp of sugar
1/2 tsp salt
1 tsp of soda bicarbonate
1 tsp of baking powder
2 tbsp of canola oil (or similar)
Dark chocolate chips (optional)
Few tbsp of oil for frying
For the decoration and filling (optional):
Strawberry mousse (follow the directions of the first two steps of this mousse cake recipe)
Except for the chocolate chips, add all the ingredients into a bowl and blend.
Heat the oil in a frying pan and pour in a ladle of the mixture. Sprinkle some choc chips (optional) into the mixture as it is frying. Flip the pancakes when firm enough and continue to fry until cooked. Repeat until all the mixture has been used.
For a delicious filling use some strawberry mousse as well as fresh strawberries and strawberry jam.
